
Gluten-free Christmas Cookies
These biscuits are very easy to make, they are gluten-free and perfect for having fun in the kitchen with your children. Additionally, they make gorgeous presents for your friends and relatives. Merry Christmas everyone!!!

Ingredients

Honey 200g

Butter 100g

Baking powder 1 tsp

Flour mix 500g: buckwheat 125g, chickpea 125g, coconut 125g, lentil 125g

You can use another gluten-free type of flour or combination of different ones.

2 small eggs

Raw cacao 1tbsp

Cinnamon 1tsp
-
Ginger 1tsp
-
Clove 1tsp

Nutmeg ¼ tsp

Rum 1 tbsp

For decoration: Oat milk 4 tbsp, Cocoa powder 2 tbsp, Butter 1 tbsp, Dark chocolate 100g
Method

Put honey and butter in a saucepan. While stirring, heat the mix and add rum. Do not allow to boil. Cool for 15 minutes and add room temperature eggs.

While the honey liquid is heating, mix all the dry ingredients (400 g of flour, baking powder, spices, cocoa).

Pour the honey liquid into the dry ingredients and knead the dough, using the remaining 100 g of flour. After kneading the dough, roll it into a lump, put it in a bag and send it to “rest” in the refrigerator for at least an hour.

Turn on the oven 200 C0. Roll out the dough, sprinkling the surface with flour, cut cookies with shapes. NOTE: you can add more flour mix if necessary. The texture of dough should be elastic. For this reason it is not advised to use nut-based flour.

Put cookies on a baking sheet covered with baking and bake for 9 -10 min.
For decoration:
Add cocoa and chocolate to butter. While heating, gradually add milk, stirring until smooth. Cool and use for decoration.
