These biscuits are wonderfully easy to make and perfect for having fun in the kitchen with your children. Additionally, they make gorgeous presents for your friends and relatives. Merry Christmas everyone!!!
*Gluten free, Egg free, Dairy free
1/3 cup dates
1/2 cup raisins (or dates, if you don’t have raisins)
1 3/4 cup buckwheat flour
40 g butter
1 tsp ground cinnamon
3 tsp ground ginger
1/8 tsp ground cloves
Pinch of salt
2 tsp blackstrap molasses
1/4 cup honey or maple syrup
Preheat the oven to 165˚C.
Process the dates and raisins in the food processor along with the butter (chopped into small cubes), cinnamon, ginger, cloves, salt, molasses, honey or maple syrup. Process until all the ingredients are well incorporated and a relatively smooth dough forms.
Place the dough between two sheets of baking paper and roll to a thickness of a little more than ½ a cm. Freeze the dough for 10 minutes, or until firm. This will make the dough easier to cut shapes out of. Remove dough from freezer and cut out shapes.
Line a baking sheet with baking paper and bake biscuits for 8-10 minuets for softer biscuits, or 12-15 minutes for hard biscuits.
Decorate with icing sugar or melted chocolate and enjoy your Christmassy treats!!!!
