Turmeric and Ginger Cookies

Turmeric possesses very strong health-promoting properties including antioxidative and immunomodulatory effects as well as anti-inflammatory and neuroprotective properties. Therefore, these little, golden, heart warming cookies will keep you healthy and satisfied.

Ingredients

  • ½ cup ground almonds

  • 1 cup organic oats

  • ½ cup mixed seeds (sunflower, pumpkin, linseed, sesame)

  • 1 cup desiccated coconut

  • Pinch of Himalayan salt

  • 1 tsp. mixed spice

  • 1 tsp. cinnamon

  • 3 tsp. ground ginger

  • 1 tsp. baking powder

  • ½ cup melted coconut oil

  • 1 ripe banana, mashed

  • 1/3 cup honey

  • 2 tbsp. nut butter (cashew or almond)

  • 1 knob fresh ginger, grated

  • 1 tsp. fresh turmeric, grated or 1½ tsp. ground turmeric

 

Method

Preheat your oven to 190˚C.

Mix together all the dry ingredients in a bowl. 

 

Melt the coconut oil over low heat and pour into a large bowl. Add the banana, honey, nut butter, fresh ginger and fresh turmeric. Blend to combine everything.

 

Add the wet ingredients to the dry ingredients, mix well to combine everything. Shape the mixture into balls and place them onto a baking tray lined with baking paper. You can even pop a few nuts on top for decoration!

Place the tray into the oven and bake for approximately 20 – 25 minutes.
