Winter Detox Soup

I came up with this recipe because it is winter and, after the long festive menus of December, my body was craving some food that was both light and easy and at the same time warm and comforting! This soup is based on chicken stock, which is a remedy in itself, and a variety of “not overcooked” green vegetables, which can vary in your recipe from those I have included bellow. It will keep you warm, help to nourish your body with nutrients that are easy to digest, will help you fight any inflammation in your body and help you to detoxify.
I recommend using all organic ingredients if possible, but especially the chicken.

Ingredients

For the stock:

  • Chicken drumsticks or any other chicken parts with bones

  • 2 - 3 L water

  • 3 - 4 bay leaves

  • 1 tbsp. whole black pepper corns

  • Pinch of salt

  • 1 tbsp. apple cider vinegar

 

For the soup:

  • 3 medium peeled and chopped potatoes

  • 1 - 2 leeks

  • 200 - 300 g broccoli

  • 1/5 tsp. curcuma (turmeric)

  • 150 g spinach

  • 150 g rocket

  • 1 - 2 courgettes

  • 1 - 2 tbsp. of full fat cream

  • Salt, black pepper, seasoning to your taste

  • Persil, coriander or any other herbs


Method

Prepare your stock by cooking your bits of chicken in boiling water over a low heat for about 3 hours. Once the water has boiled, add the bay leaves, black pepper, salt and apple cider vinegar. Slow cooking all the ingredients allows the chicken bones to release all their useful minerals in to your stock. Once the stock is ready, strain it through a colander to separate the spices and the chicken from the liquid. Separate the meat and all the cartilage from the bones and set them aside for later.


For the soup, bring your stock to a boil and add the peeled and chopped potatoes, leek and broccoli. Add the curcuma, more salt and any other spices as per your taste. Cook for 10 minutes and then add the remaining ingredients. Cook for another 3 minutes, add the ground black pepper, cream, the bits of chicken and cartilage you set aside earlier and blend everything together.


Your soup is ready to be served. Decorate it with any green herbs and seeds such as pumpkin or sunflower seeds.
