Zucchini Blinis

A snack that is both brilliantly easy and tasty; A delight for kids and adults alike!

* Gluten free, Dairy free

Ingredients

Crumble:

  • 2 small zucchinis

  • 2 eggs

  • 200 ml dairy-free milk (almond, rice, coconut etc.)

  • 1 cup buckwheat flour

  • 1/4 cup nut flour (almond, hazelnut, walnut etc.)

  • 1/2 tsp. bicarbonate soda

  • 1/2 tsp. curcuma

  • 1/2 tsp. dry basil or another herb

  • Pinch of salt

  • Pinch of black pepper

Method

Mix the eggs, zucchini and milk in a blender. Then add the flour, bicarbonate soda and spices. Once the batter is smooth in texture, melt a little bit of butter, ghee or coconut oil in a frying pan to prevent sticking and spoon approx. 2 tsp. of blini mix on top. Prepare the small pancakes and enjoy with a variety of toppings and accompaniments.
